RYAN, Head of Kitchen Operations

For our fourth meet-the-team feature, it is our pleasure to introduce you to our Head of Kitchen Operations Ryan.

Ryan joined Sabzi on a casual basis to help us out when we were stuck in the kitchen last year, and we’ve never let him go! Ryan now leads our Kitchen Team and is a joy to work with; he embodies everything I aim to do with Sabzi; disrupting the accepted norms for a professional kitchen operation…he is calm, kind and professional; a true team player and of course, he ensures that the exceptional food you all so generously keep coming back for, is meeting our Sabzi standard, every single day. On top of all that, you should hear him singing in the kitchen….!!

We had the pleasure of sitting down with Ryan in between busy moments preparing for the opening of Nansledan’s Sabzi, to ask him a few questions and get to know him a little better…


Hi RYAN! Could you describe your job in three words?

Rewarding, fun and creative

What’s the best thing that’s happened to you this week?

This week I got a new phone!


How do you like to start your day?

With coffee; always!


What motivates you?

The concept of working as hard as I can now so that I can save to travel


What’s your favourite snack?

Breadsticks and hummus


What was your first job?

My first job was working at Hubbox in Cornwall


What are you passionate about?

I’m equally as passionate about football as I am about travelling


Who’s your favourite musical artist?

Red Hot Chilli Peppers! I got to see them live last year and it was brilliant


What’s one thing you are currently trying to make a habit of?

Not going on my (new) phone as much, especially on social media


What topic could you give an hour-long presentation on with little, to no preparation?

Football, definitely!


What food have you tried that’s the furthest out of your comfort zone?

I tried both rat and frog in Cambodia and they were actually quite nice…


If you could eat one dish for every meal for the rest of your life what would it be?

I reckon it would have to be a roast dinner, there’s so much going on and I don’t think that it could ever get boring


Where would you take a Sabzi lunchbox to eat?

Probably Pendennis Point on a fine day
